Chicken temperature
Experts say internal temperature 170 degrees, Others say 160, I cook my chicken breast to 140.

Vegetable and olive oil
are the only fats that should be use for bread and pizza crust.. you can use Butter but should be reserved for pastries.

Olive oil
Should never be used in the baking of sourdough breads.

Soft bread rolls, muffins & biscuits
Are great candidates for milk and water mixture in a 50/50 ratio.

Chewy bread
High protein bread flour 13.5-14.5%  will give a good chewy bread and a thin crust 

Salt
Enhances and adds flavor to baked goods, controls yeast activity to to help achieve a slow steady rise, as-well as strengthens dough & softens texture. with pizza dough this will help in stretching to size.  Iodized salt may have an effect on yeast depending on the quantity of iodine and the quality of yeast if you are uncertain use only none iodine salt
, Sea salt / rock salt.

Vital wheat gluten
is the protein of the wheat berry, gluten added to bread or pizza dough, creates a more elastic dough.

Diastatic Malt
feed yeast and sourdough starters replacing sugar, honey & molasses, and further enhance the nutritional value of the end product.

 

 

DRY MEASURERS

 4 TABLESPOONS = 1/4CUP
 8 TABLESPOONS = 1/2 CUP
 16 TABLESPOONS = 1 CUP
 20 TABLESPOONS = 1 1/4 CUP
 24 TABLESPOONS = 1 1/2 CUP
 


 WET MEASURERS

 4 OZ = 1/2 CUP
 8 OZ = 1 CUP


 1 US cup = 48 US teaspoons
 1 US cup = 16 US tablespoons
 1 US cup = 8 US fluid ounces
